    It just seems so weird that the game doesn’t tell you what you are up against at all…

    Some areas you cannot see the enemy until you engage them. This is typically the case for non-quest fortresses or strongholds, as you mentioned above (engage at your own risk!).
    Graveyards will tell you what kind of enemy you’ll face, but won’t show their strength.

    You can equip lightly (or naked to have highest initiative) one of your mercs and make him “investigate” what’s inside..
    If he have a Pathfinder perk – it’s even better for scouting.
